When used green, this pepper is called a ‘Poblano’, and is used for making chiles rellenos. When ripened to red and dried, it is known as an ‘Ancho’. This is a thick-walled, mildly hot pepper with a rich, mellow flavor; produces continuously through the summer with warm days and cool nights.
